Tonights blog will be a recipe I learned how to do when I did Whole 30 for the first time a few months ago. If you’ve never tried Whole30, I highly suggest it. It is a wonderful way to kind of “start over” and get a strong jumpstart on getting your health back on track! 🍉🥕🍖
Now…on to the pot roast! I love this recipe because it’s just one of those warm comfort food kind of dinners. On top of that I am ALWAYS left with leftovers.
You will need:
3-4 pound beef roast
1/2 tsp salt
1/4 tsp pepper
1 tbs Italian seasoning
1/3 cup balsamic vinegar
1 garlic clove minced
1 sweet onion
1.5 pounds red potatoes quartered
1 pound carrots, cut and peeled (You will notice I only add a few carrots, a couple on the bottom and a couple on top because I’m not too big on them.
Rub the roast with the salt and pepper. Set aside. Heat up a pan with the cooking oil. Once hot, place the roast in the pan and brown all sides. Don’t cook too long. After you’ve browned the sides, place it in the base of the crockpot!
I then place the onions and potatoes all around the roast. Then sprinkle the Italian seasoning and balsamic all over the top. Add the garlic as well. I like to rub the garlic into the meat a little with the seasoning,
Cover and cook on Low for 8 hours.
When done, the meat should com apart nicely, the vegetables should be soft, and the juices in the pot work well as a sauce over all of it!
